HRT 3250L - Professional Healthy Cooking Laboratory (1) Knowledge and skills necessary to define a healthy diet, describe potentially beneficial and hazardous nutrients and list strategies to design delicious nutrient dense menu selections Emphasis is on the analysis and modification of ingredients, preparation, cooking and presentation techniques used to create nutritious tasty dishes and the production and development of healthy appetizing menu items.
Prerequisite(s): HRT 2810 /2810L , Current Food Protection Manager Certification that is acceptable as manager-level certification by the Los Angeles County Department of Environmental Health.
