Study of mechanical separations, separation and concentration using membranes, dehydration, evaporation, packaging and other unit operations in food processing that involve mass transfer with or without heat transfer. 2 hours lecture/discussion.

Corequisite(s): FST 4271L .
Prerequisite(s): C- or better in FST 4170  or FST 417.
